Smith & Hook Paso Robles Cabernet Sauvignon
Our winemaker sets aside a small number of elite barrels from Paso Robles to make this wine. This warmer region eliminates green flavors in the grapes and brings out decadent and complex dark fruit elements.
The region’s soils composed of weathered granite, marine sedimentary stone and volcanic rock are ideally suited to Cabernet Sauvignon, and help to contribute black cherry notes and seductively round and supple tannins to the wine. After harvest, we age this 100% Cabernet Sauvignon in French oak up to 14 months.
This Cab offers the ripe black currant and plum character that epitomizes how this grape variety is expressed in the Central Coast, with additional layers of spice and black cherry flavors lingering on the finish. It is nuanced and should age well for several years.
